Chocolate Coconut Protein Ball Recipe

Found yourself getting a little too familiar with your fridge over the past fortnight?

Without the gym, it seems plenty of lifters have discovered a new pastime while in isolation.

Snacking...


Surrounded by so many temptations usually reserved for cheat day, even the most iron-willed lifters have found themselves devouring a few glazed donuts or polishing off a pound of peanut butter cups. 

But if we want to emerge from isolation with our abs still visible, we’re going to need to snack a little smarter. 

To help lifters keep their macros on point, we’ve teamed up with Accredited Practicing Dietitian and healthy self-isolation snacking guru Victoria Matkovic from Thrive Nutrition, to bring you this mouthwatering coconut protein ball recipe. 

Protein balls are a fitness fanatic’s favourite for a good reason! These super balanced, nutritious snacks contain the perfect amount of protein, carbs and fats to fuel your body either pre or post workout

These protein balls can be kept in the fridge for up to 2 weeks in an airtight container, or frozen for up to 1 month. 

Chocolate Coconut Protein Balls 

Makes 8-10 balls 

Time: 
10mins + 30mins refrigeration time 

Ingredients
 
-1 cup natural cashews
-½ cup desiccated coconut, plus extra for rolling
-½ cup rolled oats
-½ cup pitted dates
-2 tbsp melted coconut oil
-1 tbsp honey 2 scoops
-(60g) chocolate protein powder 


Method:


1. Place dates in a heat proof bowl and cover with boiling water for 10mins. Once softened, drain dates while reserving the liquid.

2. In a food processor, add in the cashews, coconut, oats, soaked dates, coconut oil, honey and protein power. Pulse repeatedly to finely chop up ingredients.

3. Scrape down the sides of the food processor and blend mixture so that it is smooth and starts to form a ball. If the mixture is too dry, add in 1 tbsp at a time of the reserved date water.

4. Dampen hands with water. Use a tbsp to scoop out mixture and roll into balls. Roll balls in extra coconut and place on a tray or in a container. Refrigerate balls for 30mins to set.
